Description:
Paul Vallem processes wild rice near Hayward, Wisconsin. From late August until late October he and his friend Chris Smith scorch, thrash, and winnow handpicked, wild rice on equipment he built or inherited from his father Ray Vallem. Paul Vallem doesn't think much of the cheap, paddy rice from California and Minnesota flooding the market. He prefers the real deal.
